The four mushrooms
Lion's mane (Hericium erinaceus) is the shaggy white one that grows in cascading spines off hardwood, more sea urchin than toadstool. It's the one this jar is named for.
Chaga (Inonotus obliquus) is the black, cracked, charcoal-looking growth found on birch trees in cold northern forests. It's been brewed as a tea in Siberia and Northern Europe for a very long time, which is the only reason most Americans have heard of it at all.
Shiitake (Lentinula edodes) you already know from the produce aisle and from ramen. Maitake (Grifola frondosa) is the frilly, overlapping cluster sold as hen of the woods. Both are culinary mushrooms with a long history on the plate, here as concentrated extracts rather than dried caps.
